Boneless Beef

L&H Packing produces a wide variety of boneless beef products. The products we produce are whole muscle and are either manufactured grade or utility. We have made a name for ourselves by ensuring that we can produce products to the customers specifications. Even if that means changing our own production to adjust to our customer’s needs and taking advantage of value-added opportunities.

We start with a carcass that has been chilled in our cooler for 24 hours. Our highly trained butchers then begin breaking the carcass and trimming it to our customer’s specification. We have the capability to package the product in a variety of ways including vacuum packaging, fresh or frozen, boxed, or in combos.

Hides

L&H Packing operates its’ own hide processing facility. All of our hides are put into a salt brine solution for a 24 hour cure. We then remove the hides from the solution and process them in two different ways:

The cow hides are run through a fleshing machine which removes all of the flesh and meat from the hides. Then the hides go to our trimmers which remove any excess or loose pieces of skin and meat. The hides are then salted with dry salt and palletized according to weight.

The bull hides are sold conventional - meaning after the salt brine solution they are then salted and palletized. Our hide customers have come to enjoy consistency in hide quality from shipment to shipment.

Offal

We produce many different types of Offal products coming from cows and bulls. We save the products on our kill floor which is HACCP regulated. All of the products go directly into our blast freezer which runs at -35 degrees to -40 degrees F. This ensures that our products are frozen in a timely manner.

Our kill floor also has a full pathogen intervention program. This program starts with well trained individuals that practice GMP (Good Manufacturing Practice).The Pathogen Intervention Program also consists of 2 steam vacs, 2 organic spray cabinets, 1 carcass wash cabinet, 1 hot water pasteurization system. This system ensures that the surface temperature of each carcass reaches a minimum of 160 degrees F thus minimizing if not eliminating any harmful bacteria.

Rendering

Our rendering facility is located on sight. We produce three different products at this facility. All 3 products are produced under the rules and regulations of the Texas State Health Department and the Texas Feed & Fertilizer Control Services.

We produce meat and bone meal from bones and non-salvagable offal. The second product is Fancy Bleachable Tallow which is derived from the cooking process. The third product is blood meal. The nutritional analysis are as follows:
